The Upper East Side is getting a new reason to wake up early—and it involves cardamom buns.
Fabrique Bakery, the Swedish bakery known for its stone-oven breads, sourdough and wildly popular pastries, is coming to the Upper East Side. The bakery is taking over the former Shakespeare & Co. space at 939 Lexington Avenue between East 68th and 69th Streets, giving the neighborhood a very Scandinavian upgrade.
For anyone unfamiliar with Fabrique, consider this your official introduction to Swedish fika: the deeply civilized tradition of taking a break for coffee and something delicious. Fabrique was founded in Stockholm in 2008 by husband-and-wife team David and Charlotta Zetterström and has since expanded throughout Sweden, London and New York.
The bakery has already developed a loyal NYC following, particularly for its cardamom buns, cinnamon buns and artisanal breads. Its signature cardamom pastry, known as kardemummabullar, is dense, fragrant and twisted into the kind of pastry that makes a perfectly reasonable person say, “I’ll just have one,” before immediately ordering another.
The Upper East Side Fabrique Bakery will be the brand’s fourth New York City location, joining outposts on West 14th Street, Fifth Avenue and Old Slip. Fabrique emphasizes traditional baking methods, fresh ingredients and stone-oven production, with a menu designed around breakfast, lunch, coffee and fika.
There is just one catch: an opening date has not yet been announced. Fabrique has also not officially added the Upper East Side location to its website yet, so consider this your advance warning to start preparing your pastry plans.
Basically, the Upper East Side is about to get a little more Swedish—and a lot more buttery.
