When Bobby Flay starts talking about pizza, people tend to listen. And his latest recommendation could have New Yorkers crossing the Hudson for dinner.
Flay recently gave a very big compliment to Razza Pizza Artigianale in Jersey City, calling it “some of the best pizza in the world.” Considering this is coming from a chef who has spent decades cooking, judging and obsessing over food, that’s quite the endorsement.
Razza, founded by chef Dan Richer, has become one of New Jersey’s most talked-about pizza destinations since opening in Jersey City. Its reputation centers heavily on the dough, with carefully fermented crusts and locally sourced ingredients playing a starring role.
Apparently, Flay has been paying attention.
In a recent video, the celebrity chef was making his own mushroom pizza and revealed that Richer had actually taught him how to make the dough. Flay showed some of the process but stopped short of revealing Richer’s full recipe—which, frankly, may be the culinary equivalent of showing someone your password and then covering the last three characters.
The pizza Flay was recreating featured tomato sauce, fontina, mozzarella and mushrooms, with a crust designed to deliver that coveted combination of crispness and airy chew.
Flay also suggested that a trip to Razza might be the easier way to experience the real thing rather than attempting to recreate Richer’s dough at home.
