Daniel Humm is already attached to one of New York City’s most famous dining rooms. Now, the chef is putting his own name on the door.

HUMM, Humm’s upcoming West Village restaurant, is set to open this fall at 435 Hudson Street, in the former En Brasserie space. Unlike his legendary Eleven Madison Park, HUMM will be a more casual, à la carte restaurant built around seasonal cooking, shareable plates and a wood-fired hearth.

And yes, this is the same Daniel Humm behind Eleven Madison Park, the Madison Square Park destination that currently holds three Michelin stars.

At Eleven Madison Park, diners can currently expect a six-course tasting menu for $385 per person, with a shorter bar tasting available for $225. The restaurant’s seasonal menu can also be enjoyed fully plant-based, with choices offered on select courses.

HUMM, meanwhile, appears designed to be considerably more relaxed. The menu is expected to combine individual dishes and plates meant for sharing, with cooking centered around a dramatic wood-fired hearth. A cocktail program and substantial wine list will round things out.

The restaurant is also getting a serious design treatment. Italian artist Francesco Clemente is creating a ceiling mural, while works connected to artists including Rashid Johnson, Louise Bourgeois and Roni Horn are part of the design vision.

For New Yorkers who love Humm’s cooking but don’t necessarily want to commit to a three-hour tasting menu—or a nearly $400 food bill—HUMM could be the more spontaneous option.

The opening is expected in October 2026, although the exact date, menu and pricing have not yet been announced.

So while Eleven Madison Park remains the place for the full culinary production, HUMM is shaping up to be Daniel Humm without quite so much ceremony.

Same chef. New neighborhood. New name.

And hopefully, a slightly easier reservation.
