Located inside the O Hotel in Condado, DRGN is the latest restaurant from acclaimed Puerto Rican chef Roberto Treviño, the chef behind the influential Dragonfly concept that helped put Puerto Rican-Asian fusion on the culinary map. Now, Treviño is bringing that legacy back with a sharper, more intimate approach.
And the name is no typo. DRGN is essentially Dragonfly reborn—same rebellious spirit, new identity.
The menu jumps confidently between sushi, raw-bar dishes, Asian techniques and Puerto Rican ingredients. The DRGN Roll combines hamachi, tempura shrimp, forbidden rice, cured onion and togarashi kumquats, while the pork dumplings get a distinctly Puerto Rican twist with sweet plantains and truffles.
Then things get even more interesting.
There’s crispy salmon and bacon, duck fried rice with sweet plantains and recao, longaniza lo mein, miso black cod and a signature Peking-style duck served with bao buns and traditional garnishes. The Kāo Churrasco pairs ho fun noodles, sweet soy and chicharrón crunch—basically a vacation for your taste buds without requiring a passport.
But DRGN isn’t positioning itself as simply another fusion restaurant. The concept emphasizes the entire experience, from lighting and music to cocktails and the energy of the dining room. Treviño describes the restaurant as an evolution of his earlier work, with every detail designed to create an immersive evening.
Located at 55 Calle Barranquitas, DRGN currently serves dinner throughout the week, with later hours on Friday and Saturday.
